In the heart of the renowned Bordeaux wine region, the Crémant de Bordeaux Perles de Piote Brut from Château de Piote is a wine of excellence. This sparkling wine embodies the elegance and refinement typical of the Bordeaux region. The term ‘Crémant de Bordeaux’ identifies sparkling wines produced in the region of the same name, using the traditional method, the same used for Champagne. This denomination was officially recognised in 1990, although the production of sparkling wines in the area dates back to the 19th century. Perles de Piote Brut is made from a blend of Sémillon and Colombard. The first is a white grape variety that is very common in Bordeaux, appreciated for its ability to give structure and honeyed notes to wines. Colombard, on the other hand, adds freshness and lively fruity notes to the blend, thanks to its natural acidity. The grapes, harvested by hand to ensure the highest quality, undergo a first fermentation and ageing in ovoid terracotta containers. These particular containers allow for controlled micro-oxygenation, enhancing the aromatic complexity of the wine. Subsequently, the wine undergoes a second fermentation in the bottle, with a period of ageing on the lees of at least 12 months. This process gives Perles de Piote its characteristic fine bubbles and elegant structure. Bright straw yellow in colour, enriched by a fine and persistent perlage, it offers an aromatic bouquet with hints of yellow-fleshed fruit, cooked apple and delicate notes of citrus. In the mouth, it is characterised by a good acidity, a pleasant creaminess and a slightly salty finish, which adds depth and invites you to take another sip. Ideal as an aperitif, it goes well with fish-based dishes such as carpaccio, tartare and seafood.
Located in the heart of the Bordeaux region, Château de Piote is a company that covers an area of 14 hectares, 10 of which are dedicated to viticulture. The estate is located in Val-de-Virvée, about 20 km north of Bordeaux. Here, the Aubrion family cultivates the vines using organic and biodynamic methods, with deep respect for nature and its cycles. The story of Château de Piote began in 1998, when Virginie Aubrion and her family decided to transform a ruined farm and the surrounding land into a flourishing vineyard. With determination and passion, Virginie has taken on the role of winemaker, while her son Corentin and other members of the family contribute to the day-to-day running of the estate. The company grows eight different varieties, including Merlot, Cabernet Sauvignon, Cabernet Franc, Malbec, Petit Verdot, as well as Sémillon and Colombard. The Château's production philosophy is based on sustainable and environmentally friendly practices. The harvest is carried out entirely by hand, guaranteeing an accurate selection of the grapes. Fermentation takes place using indigenous yeasts, without the addition of sulphites, and the wines are aged in concrete and stainless steel vats, as well as terracotta and stoneware amphorae.
